Then to Mozambique and a luxury Eco-Lodge on the coast – busman’s holiday really and I experienced how not to do it! Memo to self – Do NOT open a hotel before it is ready and the staff are tried and tested. Do NOT employ a chef that can’t even get the oil hot enough to fry chips or deal with more than one order! Make sure you get a good project manager (I’ve thankfully ticked that box), don’t let him / her leave and check the workmanship of the builders. I could go on. Interesting though and I did relax with a couple of good books inbetween asking about supply chains / staffing / back of house etc.
